Warm Jazz apple and celery salad with toasted macadamia and curry emulsion
5 Jazz apples, quartered seeds removed and diced
6 Celery sticks, sliced thin
½ Punet cherry tomatoes cut in half
¼ Cup toasted macadamias crushed
1 Tablespoon coriander seeds crushed
2 Shallots, peeled and sliced thin
1 Tablespoon olive oil
¼ Cup mayonnaise
¼ Teaspoon curry powder
3 Tablespoon cream
Salt and pepper
Mix the curry powder and the mayonnaise together, add cream to make a little runny, adjust seasoning, and add a little lemon juice.
In a bowl mix celery, apple and tomatoes with the crushed coriander seeds and shallots.
Heat a sauté pan with oil and add the apple and celery mix, toss over heat for 2 minutes till it is warm. Season mixture and sprinkle over the macadamia nuts.
Serve with the curry emulsion and grilled pork chop with your favourite herbs
